Deployment changes are un-cancelled because I think it's the best way forward at this moment. "Keep Calm and Devops On"

Un-cancelled. The monorepo + dokku deploy is full of problems that don't exist if I use kubernetes. Let's look at pros & cons.

Today I improved the packages/next Docker build. Encountered a blocker-- environment variables aren't passed to the docker container as it builds on the remote. Investigating a way to work around

Kubernetes is cancelled due to time constraints. I'll re-explore at a later date.
